4 generous servings

  • 1 lb sushi-grade tuna
  • 3 scallions
  • 2 T fresh-squeezed lime juice (2 medium limes)
  • 2 T soy sauce
  • 1 t toasted sesame oil
  • 3 t toasted sesame seeds
  • 1.5 t fresh ginger, grated
To taste:
  • 1 T lime juince
  • 1 t toasted sesame seeds
  • salt
  • ground pepper
  • crushed red pepper
  • jalapeños
Trim dark flesh & fat from tuna. Cut into 1/2 inch cubes. Finely chop the white and light green parts of the scallions. Combine all ingredients.

Notes: very tasty, wants more heat.
